Pineapple Salsa

: Pineapple Salsa

: for best results, make this early in the day (or even the day before) to give the flavors time to blend! This is wonderful served as an appetizer or over Cedar Plank Salmon!

  1. 1 pineapple, chopped
  2. 1 onion, chopped
  3. 1-2 tsp jalapeno pepper, chopped
  4. 1 tbsp grated ginger
  5. 1 tbsp brown sugar
  6. 1 1/2 tsp Lawry’s seasoned pepper
  7. 2 tbsp fresh cilantro

  1. Cook onion over low heat with a little cooking spray until translucent.
  2. Add pineapple, pepper, ginger, sugar and pepper and cook for about 5 minutes.
  3. Sprinkle on cilantro.
  4. Serve warm or at room temperature.
