Recipe: Cheese & Cinnamon Blintzes

Summary: This recipe was submitted by Allison of A Computer Mom…and they look delicious!  What I like best is that you don’t have to be comfortable using pie or pastry dough to use them and they are made from ingredients that most people have in their home at any given time! They also look like a great recipe to make with the children!


  • 1lb cream cheese
  • 2 egg yolks
  • ½ tsp lemon juice
  • ½ c sugar
  • 2 large loaves white bread (fresh)
  • 2 sticks melted butter
  • 1 c brown sugar
  • 3 tsp cinnamon


  1. Remove crusts from bread. Flatten each slice of bread with a rolling pin.
  2. Mix cheese, egg yolks, lemon juice & sugar.
  3. In a separate bowl mix together brown sugar and cinnamon.
  4. Spread cream cheese mixture on each slice of bread. Roll into logs.
  5. Dip logs into butter and roll in cinnamon sugar mixture. Freeze for 3 hours.
  6. Remove from freezer and cut in half or thirds.
  7. Bake on a greased cookie sheet 10-15 minutes at 350 degrees.
  8. Serve warm.

I’ve stored these in the freezer for a month. They are great to keep on hand for guests or parties, etc
