Turkey Sloppy Joes

These are one of Brad’s favorite things to eat.  I usually make a double or triple batch and freeze the rest in freezer bags or containers! This recipe was inspired by Rachael Ray’s more traditional Sloppy Joes.

Turkey Sloppy Joes

Ingredients

  • 1 1/2 tablespoon extra-virgin olive oil
  • 1 1/2 pounds ground turkey (the leaner the better!)
  • 1/3 cup brown sugar
  • 1 tablespoon Emeril’s Original Essence
  • 1/2 Vidalia onion, chopped
  • 1 medium red bell pepper, chopped
  • 1 tablespoon red wine vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 1/2 cups canned tomato sauce
  • 1 cup Fire Roasted diced tomatoes
  • 2 tablespoons tomato paste
  • 4 crusty rolls or hamburger buns

Directions

  1. Heat a large skillet over medium high heat.
  2. Add oil and turkey and begin to brown it.
  3. Add brown sugar and Essence and continue browning.
  4. Once the turkey is completely cooked, add onion, red peppers, red wine vinegar and Worcestershire sauce to the skillet.
  5. Continue cooking for 5 minutes, then add tomato sauce, diced tomatoes and tomato paste.
  6. Reduce heat and bring to a simmer, then simmer for an additional 5 to 8 minutes.
  7. Serve Sloppy Joe mixture on the rolls (if you like it messy, serve it as a sandwich. I prefer to use a knife and fork and serve it open-faced).

We recently made Turkey Jo’s and they were a huge hit! I had a mini baguette from Target (free after coupon) that I sliced and hollowed out. I stuffed it with the Jo mixture and topped with the other piece of the bread. I then wrapped in foil and baked for about 15 minutes. It disappeared in all of about five minutes.
